Sunflower Salad Dressing


I've got a few requests for this simple recipe. Its easy and delicious with your various salads and cooked dishes or as a dip. Its very similar to a tahini dressing. Makes about 3 cups and can be kept in the fridge for 4 - 6 days.

Ingredients

  • 3/4 cup sunflower seeds and/or pumpkin seeds
  • 3/4 cup lemon juice or apple cider vinegar
  • 3/4 cup extra virgin olive oil
  • 1/2 cup tamari or shoyu

    Optional:
  • 1 Tbs toasted sesame oil
  • 1/2 bunch fresh cilantro
  • 1 tsp honey or 3 drops liquid stevia (if you like it a little sweet)
  •  Pinch of cayanne (if you like it a little spicy)
Instructions
  1. Soak seeds in warm water for 1 - 2 hours. Seeds will expand in volume. 
  2. Drain seeds in colander and rinse well.
  3. Mix all ingredients in a high powered blender until smooth and pourable. Add a little water to thin or add more oil or sesame tahini to thicken. 
  4. Serve immediately or store in a glass jar in the fridge. It tends to thicken as it sits in the fridge so before serving, let it sit out for some time. Add a little water if needed and shake it up.
